The 3-star Hotel Salento in Specchia is surrounded by greenery, with large open spaces where you can read, walk, bike path, secure parking, playground for children. The Hotel also has the Restaurant called "Noviera". Our structure was inaugurated on October 28th 1991 with the name "Noviera", a name that derives precisely from the "Niviere" present on our land, real cisterns that are built in the coldest areas of Salento. The restaurant has large indoor and outdoor dining rooms, surrounded by natural rocks and surrounded by greenery. Our menus prepared by experienced chefs propose typical products of Salento, which are regional and national specialties. Tasty wines, fresh fish (every day), local meats, typical homemade products such as "potato crocchette", "arancini di riso", "polpette di polipo", "maltagliate al cartoccio", "local fish specialties in various ways (grilling and cartocci flavored with herbs)". 70% of the products are of organic agriculture, produced personally in our estates.
